Apple Cranberry Crumb Pie

INGREDIENTS:

Filling:

  • 6 cups peeled thin sliced apples
  • 1/2 cup dried cranberries
  • 1/3 cups maple syrup
  • 1 tbsp lemon juice
  • 1-1/2 tsp vanilla flavor extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg

Pie:

  • 2 low fat graham cracker shells
  • 1 cup rolled oats
  • 3/4 cup brown sugar
  • 1/3 cup flour
  • 1 tsp cinnamon
  • 2-1/2 tsp light butter spread

DIRECTIONS

  • Preheat oven to 375*F.
  • In large bowl: combine apples, cranberries, maple syrup, lemon juice, vanilla, cinnamon, nutmeg.
  • Spread evenly in pie shell.
  • Combine in another bowl: oats, brown sugar, flour and cinnamon together.
  • Add butter (softened) and stir, then spread evenly across pie
  • Bake 45 minutes.
  • Remove and let set for 30 minutes.
  • Makes 2 pies
