Grilled Sweet Potatoes

INGREDIENTS:

  • 1 medium sweet potato, cut into strips
  • 10 rings of onions, raw
  • 1 tbsp garlic powder
  • Dash of Cavendars Lite Greek Seasoning
  • 1 tbsp light margarine
  • 1/2 cup green peppers, cut into strips

DIRECTIONS

  • Peel one medium sized sweet potato, cut into strips
  • Place on aluminum foil, large enough to hold all ingredients
  • Layer on onions and green peppers
  • Top with garlic powder and greek spices
  • Place dots of margarine over the surface of all ingredients
  • Fold up aluminum foil and cook for 30 mintes in a charcoal grill, directly on the coals.
