A great baking tip: before you fire up the ovens for a fall baking extravaganza, be sure to know your oven intimately. Buy an inexpensive oven thermometer and check the oven temperature in two or three different spots. Most oven readouts are a few degrees (or more) off, and an oven thermometer can help you calibrate your baking. For instance, if your oven read out says 325 degrees, but your oven thermometer only says 300, you know you need to bake all 325 degree recipes at 350 degrees.
